The famous Irish Coffee is served in warm, long-stemmed glasses and is made of hot, sweet and strong coffee, Irish whiskey and is topped with a dollop of whipped cream. Sylvia Corrina Rosin named this suite of five Irish traditionals for recorder trio after this heart and stomach warming speciality. The pieces can be played separately or one after the other. 

The present Irish dances are Hornpipe (Faeries'), Jig (The Irish Washerwoman) and Reels (Johnny from Gandsey and The Musical Priest). Down by the Salley Gardens is one of the most beautiful Irish love songs with lyrics by William Butler Yeats (1865-1939).
